Meet The True Artisan Café Participants
The True Artisan Café — a fan-favourite feature from the London Coffee Festival — is going virtual for The Global Coffee Festival. Get to know the participants.
The True Artisan Café will feature La Marzocco users showcasing coffees in a unique fashion. As part of The True Artisan Café, each participant will create a ‘signature drink’ especially for the occasion, providing a ‘how-to’ guide so viewers can recreate themselves. As well as the Signature Drink, each participant will explain the back-story to their company and showcase their coffee roaster partner through creation of an espresso based milk-drink.

Get to know the participating bakeries and roasters below, ahead of their demonstration at 16:30 GMT on 30 October 2020.

Canakin x Origin

Join Lee Simmons, owner of Canakin, and Ryan Caisley, London Wholesale Manager at Origin Coffee Roasters, create their Signature Drink, "Orange Espresso Tonic". The drink is made with Origin's San Fermin, Colombian Single Origin, used because of its bright orange notes and hints of caramel, blood orange marmalade and tonic water.

About Canakin:
"Canakin was born from a desire to bring specialty coffee and patisserie to my home town of Reigate. Opened in late summer 2019, Canakin quickly gained popularity for its macarons and cinnamon buns, and is now a benchmark for great coffee and patisserie in the area. Our mission is to ‘make everything’ which sets us apart from our competition. This has been the key to our success during our first year of opening."

Brera x Notes

Join Vasiliy Stehura, Head of Drinks and Beverages at Brera, create a seasonal "Autumn Pumpkin Latte". Made with real-food ingredients like baked pumpkin puree, cinnamon and agave syrup, and rounded off with Notes' Caffee Italiano Superiore, a full-body espresso with notes of chocolate, nuts, marmalade and black cherry.

About Brera:
"Established in 1991, BRERA is an epicurean all-day restaurant with a cosy atmosphere, amazing service & authentic Italian dishes.  We are inspired by the style of Milan, the ambience of classic European restaurants and use only the best seasonal ingredients. With the recent opening of our bakery we offer hand shaped goods which we believe results in a superior quality of our breads and desserts. It is the care that goes into the ingredients we source, the precision in the way we prepare it, the joy with which we serve it, and the love we offer to our customers. We build communities around our tables."

Popham's x Ozone

Adrianna Murk and Delvis Gracia Marte from Popham's Bakery join forces to created "Affogato Pastry". This unique beverage is created with a pastry case made from croissant dough, lined with dark chocolate, a scoop of Hackney Gelato and a shot of Ozone Empire Blend espresso — with taste notes of nougate, milk chocolate and caramel — poured on top.

About Popham’s:
"Popham’s is an artisanal bakery, restaurant and coffee shop using traditional techniques to create delicious, hand-crafted viennoiserie pastries and fresh pasta with a modern twist. Our coffee comes from local roasters and our good friends, Ozone Coffee Roasters."

GAIL’s x Union

Watch Jessica Worden, Head of Coffee, GAIL’S Bakery, make the "Waste-Less Espresso", created to elevate waste stream ingredients to draw attention to how we can repurpose surplus ingredients and products. This signature drink is made with agave-sweetened espresso, roasted by Union Hand Roasted, topped with toasted bran infused Brades Farm cream and caramelised Waste-Less Sourdough crumb.

About GAIL’s:

"Our first GAIL’s bakery opened in London’s Hampstead High Street in 2005. Today, we have 60 bakeries in neighbourhoods in and around London, Oxford, Brighton and beyond. We bake fresh, handmade bread, pastries and cakes every day, served with our carefully-sourced house blend speciality coffee. We take great please in using the best ingredients we can find for food and drink, using seasonal ingredients from suppliers we trust. Though we’ve grown over the years, our philosophy has remained the same: to make good food that people love, and create bakeries that people want to keep coming back to.Second only to the love for our mother doughs, we take the most joy from out daily chats with our regular customers, many of whom have been with us since we started."
